Energy Balls – nuggets of energy-boosting goodness!
- 50g soft dried apricots
- 100g soft dried dates
- 50g dried cherries or cranberries
- 2tsp coconut oil
- 1 TBsp toasted sesame seeds or desiccated coconut
In a food processor, whizz the apricots, dates and cherries or cranberries until finely chopped, then tip into a mixing bowl. Add the coconut oil and use your hands to work the coconut oil into the dried fruit mixture. Shape the mix into walnut-sized balls, then roll in the sesame seeds or desiccated coconut. Store in an airtight container until you need your next energy boost .
Try different combinations of your favourite dried fruits or add some nuts and seeds to alter the texture and flavour.
